Prepping bamboo shoots

Now fully cleaned, you're ready to prep. These shoots need to be prepped differently, depending on what dish they go into. We are preparing a sea cucumber dish, so large, thin slices are the most appropriate. Look how beautiful each slice can clearly see each ring and layer of the bamboo.
