On my trip to Niagara in early May of this year, I finally had the opportunity to visit Upper Canada Cheese Company. Great place, lots of artisanal cheese, representing the finest the Niagara terroir offers.
This is their most famous product, called Niagara Gold. Made of Guernsey cow's milk, this is an oka-style cheese, semi-hard, very delicious. Rich, creamy, but still retains a firm texture. Wonderful, and at $60 a kilo, this is an impressive cheese indeed. Finishes round, very long.
