Sardinas fritas

I found sardines at my fishmonger's last weekend. Don't see them often; don't miss an opportunity. They're looked on as inferior fish, but handled delicately, I absolutely adore them. Seasoned simply and seared in olive oil, the richness is balanced beautifully with a drop of fresh lemon juice, and a courgette salad. Inspired by the authenticity presented by Casa Mono.
